I am a self-confessed peanut butter nutter as you may already know from several odes to peanut butter throughout my blog (here, here and here). The one thing that beats peanut butter straight from the jar is when it’s paired with its number one partner in crime – chocolate.
A somewhat annoying thing about IBS is that there is no specific cause for it, making it a whole lot harder to manage. The FODMAP diet is undoubtedly helpful in finding what specific foods trigger a reaction in each individual person. However, sometimes the FODMAP diet alone, or any other diet for that matter, simply isn’t enough (and that’s coming from its biggest advocate!). Having tried supplements, certain recommended foods and drinks and every kind of food elimination or restrictive diet under the sun, I’ve accepted recently that at times IBS is just not preventable.
Last week my friend Amy and I took a trip down the long, windy (and extremely narrow) country roads to spend a few days in the lovely Cornwall.
Last night was taco night. This Mexican feast consisted of cheesy nachos, guacamole, salsa and, of course, tacos. The best bit about it was that it was all FODMAP-friendly, completely healthy and totally delicious!
Two weeks ago I packed my bags and took a road trip to Wales with some of my closest friends for Gottwood, a boutique music festival. Gottwood’s surroundings are completely idyllic with rolling hills, magical woodlands and the glistening blue sea in sight. We spent four nights enjoying music, having fun and taking in the beautiful surroundings.
